Maine Fiddlehead Recipes

Fresh is Always Best! While canned fiddleheads are available throughout the year, nothing compares to the flavor of Fresh Fiddleheads from Aroostook County, Maine. Our favorite way to prepare fresh fiddleheads is as follows:

Step 1: Clean, Clean, Clean! Although MaineFiddleheads.com pre-cleans all of our fiddleheads, they must be cleaned once again before preparing! To clean fresh fiddleheads, rinse several times in fresh water, swirling the fiddleheads with your hands to work out the brown leaf like covering that protects the fiddlehead from early spring frosts!

Our favorite way to prepare fresh fiddleheads is as follows:

Clean thoroughly and place in boiling water and boil for 7 to 8 minutes. Top with butter and salt and pepper to taste and serve as a delicious vegetable side dish.

Most fiddlehead recipes will call for blanched fiddleheads. To blanch fiddleheads, clean thoroughly and drop in boiling water for 1 minute. Blanched fiddleheads would then be used in recipes where they would complete cooking.

To freeze fresh fiddleheads blanch as described above and drain and place in freezer bags and place in freezer. Use frozen fiddleheads throughout the year until the new crop arrives in the spring!
